With
the summer school holidays coming to an end and momentous times ahead
for both of our children with our eldest moving to a junior school
and our youngest starting infant school, we are going to end the
holidays on a high with a big celebratory BBQ.
We
love a BBQ with friends and family. Tasty food, great company and
garden games for the kids (big kids too) to enjoy in lovely summer
weather makes for a fantastic time for all. As we have been so busy
over the summer holidays it is also a great excuse to catch up with
our nearest and dearest before the back to school routine kicks in.
With
it being a celebratory BBQ a big party for our loved ones I want to
make it an extra special BBQ. The kids are in charge of organising
fun garden games that we all can enjoy. Lee is making sure the party
goes with a swing with an eclectic playlist of songs everyone can
sing and dance to as well as stocking the bar for merry times plus
creating delicious mocktails for those of us who don’t drink
alcohol. For our BBQ I am donning my chef hat and creating a tasty
selection of foods ideal for the perfect summer BBQ.
To
elevate the BBQ food from the standard burgers and bangers (which
will still be on the menu as a BBQ is not complete without them!) and
wow our guests with a range of new and exciting appetizing and
flavourful BBQ food I have been looking for special BBQ recipes.
Thanks
to Seasoned Cookery School who specialise in inspirational cookery courses
(I am very tempted to sign up to their baking courses to hone my
skills in the hope of being able to enter the famous the Great
British Bake Off tent as a competitor one day) I have found a
fabulous selection of recipes that I will be recreating for our BBQ
to dish up a sublime feast for our guests. Herby yoghurt chutney as
the perfect accompaniment for spicy food, slow cooker Carolina BBQ
chicken that I can prepare in advance to go with fresh bread rolls
and summer salads, pineapple and coconut Panna Cotta as a fresh
tasting dessert, summer Pimms jelly for the grown-ups and
blackcurrant sorbet made with fruit that me and the kids have picked
ourselves.
My
favourite recipe I found whilst perusing the Seasoned website that I
am excited to try is the simple yet sublime cedar planked salmon
cooked on a barbecue. This ingenious way of cooking salmon means that
the fish is cooked gently so retains its moisture whilst absorbing
the earthy wood flavour from the cedar.
Even
though the ingredients needed for this recipe are modest - olive oil,
lemon juice, salmon, onion, salt and pepper with sauce/marinade of
your choice - the unique cooking technique elevates the salmon from
simple to sublime making al fresco dining that little bit more
special. The cooking technique is a wonderful combination of
barbecue, smoking and steaming which gives the salmon its exceptional
and delicate flavour. Ideal with a summer salad the cedar planked
salmon cooked on a barbecue is a light and delicious BBQ meal.
