Sublime Cedar Planked Salmon cooked on a barbecue


With the summer school holidays coming to an end and momentous times ahead for both of our children with our eldest moving to a junior school and our youngest starting infant school, we are going to end the holidays on a high with a big celebratory BBQ.

We love a BBQ with friends and family. Tasty food, great company and garden games for the kids (big kids too) to enjoy in lovely summer weather makes for a fantastic time for all. As we have been so busy over the summer holidays it is also a great excuse to catch up with our nearest and dearest before the back to school routine kicks in.

Children and the battle to eat healthy food.

Nourishing your children can be a tricky task at times with so many sugary snacks and junk foods being so easily accessible. However, these primary years are the best time to teach your children about optimum nutrition in order to equip them with this knowledge for the rest of their lives. When we encourage our children to make positive choices when it comes to their meals, we are helping them to grow and giving them a taste for foods which will help their bodies and their minds to develop properly.

One of the biggest problems with getting children to eat healthy foods is that they are often opposed to the way these foods taste. That’s not to say that all healthy foods don’t taste good but rather that children might not find them palatable! Finding ways to make healthy foods look and taste appealing to children is a great way to encourage them to eat them.

Julie Montagu is one mum who is striving to do exactly this for her kids and has come up with a way to get children excited about cabbage! By mashing the cabbage down and mixing it with just a handful of other ingredients, Julie has created a dish that serves as breakfast or lunch and can even just be eaten throughout the day as a snack. Thai Scrambled Eggs – The Happy Egg Co. recipe.

Serves: 2

Ingredients:
* 4 Happy Co. Eggs – Whites, Biggies, Organic
* 75ml (5tbsp) coconut milk
* Seasoning
* 12g (½oz) butter
* 3 spring onions – sliced
* ½ red chilli – deseeded and finely chopped
* 5ml (1tsp) root ginger – peeled and grated
* Ciabatta – sliced
* Extra spring onions – sliced to serve

Method:
1. Lightly whisk together the eggs, coconut milk and salt and black pepper.
2. Heat a small non-stick frying pan, then add the butter and let it melt.
3. Add the spring onions, chilli and ginger, and stir.
4. Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Then stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Repeat until the eggs are softly set and slightly runny in places, then remove from the heat.
5. Toast the sliced ciabatta then butter the toasted ciabatta. Serve the scrambled eggs piled on the toasted ciabatta, sprinkled with extra sliced spring onions on top.

The Happy Egg Co. Pecan and Chocolate Honeycomb Cookies.

As a part of the #happyeggtastemakers team for The Happy Egg Co. we get to enjoy yummy treats, taste The Happy Egg Co.’s eggs and hear all their exciting news. When we recently got sent a lovely gift from The Happy Egg Co. that included a tasty chick biscuit we also got sent a tasty recipe.


Whilst we have yet to try the recipe yet thanks to our oven packing up (eek!! Christmas is fast approaching and our oven doesn’t work……panic!), the recipe sounds so yummy that I wanted to share it with you lovely lot just in case you want to try making it.

Cooking time: About 12 minutes
Oven temperature: 180˚C / 350˚F / Gas mark 4

Bread and Butter Pudding.

Now that there is a cold chill in the air as we are enjoy Autumn and anticipate Winter, we have been enjoying warm puddings. Warm puddings are a tasty treat to warm you up from the inside, a comforting treat that is delicious and homely.

This afternoon whilst the rain was pouring down outside and a biting cold chill filled the air Bug and I baked one of my favourite puddings - bread and butter pudding.

I love bread and butter pudding as it evokes fond memories of sitting in our farmhouse kitchen watching my dear late Mamgu put together a bread and butter pudding in a blink of an eye then smelling the sweet aroma of the hearty pudding baking in the oven.

I love how simple bread and butter pudding is to make. This Bread and Butter pudding recipe from Sunrise Senior Living is super easy to follow to make a delicious, mouth-watering pudding.
